Jianbing is a popular Chinese street food, often referred to as a Chinese crepe or Chinese pancake. It is made from a thin batter primarily composed of wheat and grain flours, typically cooked on a large circular griddle. The batter is spread thinly over the cooking surface and then topped with various fillings such as eggs, scallions, meats (like pork or chicken), crispy fried wontons, and sauces such as chili sauce or soybean paste. Once the fillings are added, the Jianbing is folded and wrapped, creating a convenient handheld snack or meal. It's a flavorful and satisfying option enjoyed by many for breakfast or as a quick and tasty street food option throughout China.

- 35g all-purpose flour

- 20g millet flour

- 150g water

- Cooked ground pork seasoned with chili and soy sauce

- Shredded cabbage

- Fried wontons

Donโ€™tโ€™ limit yourself! This crepe is a fantastic vessel for so many sweet or savory options. 

 Instructions:

In a blender, combine the all-purpose flour, millet flour, and water. Blend until smooth. Allow the batter to rest in the refrigerator for at least 2 hours, or up to a day, to ensure the flour fully hydrates.

Heat a large non-stick skillet or crepe pan over medium-high heat. Once hot, lightly oil the pan with a high-heat oil such as canola or soybean oil. Pour enough batter into the pan to evenly cover the surface. Allow the crepe to cook briefly until set.

Add your desired fillings such as chili sauce, lightly beaten egg, cooked ground pork, and fried wontons onto the cooking crepe. Be sure they are warm and/or cooked before adding. Carefully fold the crepe into thirds to create a tube shape, ensuring all the fillings are tucked inside. Serve your Jianbing hot and enjoy!
