Sautéed in butter and infused with garlic and herbs, they make a versatile accompaniment to grains, roasted meats, or delicate fish. Maitake Mushrooms with Garlic and Herbs

Ingredients:
- ½ lb. Maitake mushrooms, torn into bite-sized pieces
-2 Tbsp. Butter -1 Tbsp. Olive oil
-2 Cloves Garlic, minced
-1 tsp. Thyme, chopped
-1 tsp. Oregano, chopped -Salt & black pepper, to taste
-Lemon wedge, for serving

Instructions:

Sauté the Mushrooms:
Heat a large skillet over medium-high heat. Add the olive oil and butter. Once the butter is melted and slightly foamy, add the maitake mushrooms, spreading them in an even layer. Let them cook undisturbed for 2–3 minutes to develop a golden, crispy edge before stirring. Continue cooking, stirring occasionally, until deeply browned and crispy, about 5–7 minutes total.

Infuse with Garlic & Herbs:
Lower the heat to medium. Add the garlic, thyme, and oregano, stirring quickly to avoid burning. Cook for another 30 seconds to 1 minute, until fragrant. Season with salt and black pepper to taste.

Serve:
Transfer to a serving dish and squeeze fresh lemon juice over the mushrooms. Serve as a side with grains, roasted meats, or fish, or enjoy on their own as a crispy, savory snack.
